Spanish Style Artichoke and Chorizo Dip (Gluten Free)
This dip is so good, it’s the typical artichoke dip but kicked up with some extra yummy Spanish ingredients. You could serve this with crudite, baguette, crackers or firm chips. It’s best served straight out the the oven….but be careful not to burn your tongue!
Ingredients:
1 cup mayonnaise (store bought)
3/4 cup shredded cheddar cheese
1/2 cup shredded Mexican mix cheese or mozzarella
1/4 cup parmesan
2 garlic cloves
1 teaspoon smoked paprika
1 teaspoon ancho chili
1/2 teaspoon cumin
1/2 teaspoon salt (kosher) or to taste
1/2 teaspoon fresh ground pepper
1 jalapeno pepper chopped (more or less according to your taste)
2 tablespoons salsa or if you don’t have use several dashes of your favorite hot sauce
1/2 of one Spanish style chorizo ( I like the brand Silva) sliced very thin
1 Jalapeno for garnish
Directions:
- Slice chorizo thinly
- Heat about 1 inch of canola oil in a sauce pan on medium high heat
- Fry the chorizo until they turn orange this will take about 2 minutes, let cool on paper towels, reserve about 8 pieces to sprinkle on the top of the dip.
- Mix all other ingredients in a food processor, using the pulse button so the mixture doesn’t turn completely smooth. It’s ok if it does but I like it with some texture.
