Super easy weeknight beef enchiladas (Gluten Free)
These are so good and I believe sometimes you’ve got to take advantage of the
beautiful pre-made sauces out there to make cooking quick, healthy and easy.
The pre-made Sauces by Rick Bayless are amazing and gluten free.
Ingredients:
2 tablespoons canola oil
1 lb. 90/10 ground sirloin, turkey or chicken
Salt and pepper to taste
3 tablespoons taco seasoning
1 can chopped green chilies
1 onion chopped
1/4 cup chicken stock
3 8oz size enchilada sauce (or 4 if you like it really saucy)
I love Rick Bayless sauces from his restaurant Fontera, you can buy these in most grocery stores or online. Or use any enchilada sauce you like.
1 package of 8 corn tortillas
1 2 cup package grated cheddar and jack mix cheese or Mexican mixed cheese
Directions:
- in a skillet brown beef with oil until browned
- add taco seasoning, green chilis and onions
- add chicken stock and let simmer until liquid is dissolved into meat mixture
- pour 1/2 cup enchilada sauce into a pyrex dish and immerse the tortillas. Heat in the microwave for 30 seconds (this will make it the tortillas more pliable)
- add 1/4 cup enchilada sauce to bottom of a large pyrex dish (like a lasagna pan)
- on a plate place one tortilla and fill with 2 large tablespoons meat and 2 tablespoons cheese. Roll and place into dish with the seam on the bottom of the dish
- continue this process until pan is filled
- add remaining cheese and sauce to top of enchiladas
- bake at 350 for 45 min or until bubbly
- sprinkle with cilantro
- add toppings, I love sour cream on mine.
