Cuban Beef Picadillo (Gluten Free)
This is a perfect recipe to feed a family who loves to try new flavors and also keep dinner on budget. I really like Cuban food and wanted to start sharing more recipes I come across and this one is a winner. It’s easy and most ingredients should be in your perfectly stocked pantry and fridge. I served it with saffron rice but you could just use white rice cooked in chicken stock. Ground sirloin which is also called 90/10 ground beef is a protein I use often. It’s so versatile and inexpensive compared to steak. It’s one of my on hand freezer ingredients.
Ingredients:
3 tablespoons canola oil
1 yellow onion chopped
4 garlic cloves chopped
4 bay leaves
1 teaspoon kosher salt
1/2 teaspoon fresh ground pepper
5 small fresh tomatoes chopped
1 pound organic ground sirloin 90/10
1/4 cup sherry wine
1/2 cup green olives with pimentos sliced
1/4 cup raisins (optional, I don’t use them but they are traditional in this recipe)
1/2 teaspoon cinnamon
3/4 of a 14.5 ounce can chopped tomatoes with juice
2 teaspoon Mexican oregano
2 teaspoon cumin
1/2 teaspoon cayenne (less or more to taste)
1/2 cup chicken stock
1 teaspoon red wine vinegar
2 tablespoons fresh chopped parsley
Directions:
- Heat oil in sauté pan on medium heat, add onion, salt, pepper and sauté for 3 minutes until translucent
- Add garlic, bay leaf and sauté another minute
- Add tomatoes and sauté 3 minutes
- Add ground beef and cook for 5 minutes
- Turn stove to high heat and add wine, olives and raisins (if using raisins) cook for 1 minute
- Reduce heat to medium and add remaining ingredients except vinegar and cook another 3 minutes or until mixture comes together
- Add vinegar and parsley and cook another minute
Serve with Rice
