Classic Lemon Vinaigrette - Gluten Free Optional

I always have this dressing in my fridge, its super easy to make and is so delicious. You can also variate it by adding a spoon full of fruit preserves, or teaspoon of herbs at the end. I also use this as a marinade for fish, chicken and beef.....anything really. I make a double batch mostly because I have to share with friends.

Ingredients:

  • 1 garlic clove or shallot chopped (if using the shallot add it at the end and I like to slice it thin rather than chop, the slices have a nice look and texture)
  • 1 tablespoon honey
  • 1 tablespoon dijion mustard
  • 1 teaspoon salt or to taste
  • 1/4 cup Meyer lemon juice or 1/3 cup regular lemon juice 1/2 cup olive oil
  • 1/2 teaspoon pepper

Directions:

  • 1. In a blender or food processor add chopped garlic (remember if your adding shallot instead it goes in at the end), honey, dijon and salt
  • 2. Add lemon juice and in a slow stream while blender is running add olive oil
  • 3. finish with pepper to taste
