What to do with to many Avocados…..wait really? Be Creative.
Is there such a thing? Well when you buy the bag from the big box stores sometimes you end up with a few extra avocado which you have to find uses for before they are totoally overripe. Overripe avo's don't look very appetizing on salads. I like to add them to my AM shake. It gives it a smooth finish and a nice creamy taste. I also love to make Avo crema and add this to tacos. This is a great topping for pretty much anything. See my recipe below.
Here are a few benefits to Avo’s:
- Avocados are a powerful brain food due to containing high amounts of vitamin E and omega-3 fatty acids
- This food contains monounsaturated fat, a type of fat that is healthy and necessary. A cup of avocado provides you with approximately 30% of this type of healthy fat per day
- Fiber is important for your digestive tract because it keeps things moving and bulks your stool
- It also helps to prevent spikes in blood sugar because your body does not quickly metabolize it
Avocado Crema
I love to recreate recipes from restaurants I go to. There is a blackened fish taco at the yardhouse.com which I love and can’t help but order each time I go. This is one element of the dish which can be used in so many other dishes. Top it on grilled meats, spread it on sandwiches or use it as a dip. For one of my favorite healthy recipes I make fish tacos in lettuce cups and top with this awwwwsome crema. You can also thin it by adding more citrus or even water to make a salad dressing. Add about 2 tablespoons at a time until desired consistency.
Ingredients:
1/2 cup sour cream
1/2 avocado
1/4 cup cilantro
1 lime Juiced and zested
1 teaspoon salt
Directions:
- Mix all in blender or by hand
YUMMY!!!!!!!
